Cabbage and broccoli soup

Serves 4 – 6/ prep time 10 min. / Cook time 20 min.

Ingredients:

  • 1 tbs. Olive oil
  • 1 med. Chopped onion
  • 2 cubed med size potatoes
  • 1 cup. Chopped cabbage
  • 1 cup. Chopped broccoli
  • 2 cup. Chicken broth

Method:

  • In a 4 qt. Saucepan saute the onion for about 5 min.
  • Then add the potatoes, cabbage and broccoli and on med. heat cook until soft.
  • Then add the broth and after 5 min. reduce heat and simmer for 15 min. Salt and pepper to taste.

* If using leftover cabbage and broccoli, add those when you reduce the heat to simmer.
** you can use any flavor broth that you have on hand
