Easy and creamy enchiladas

“ these sound complicated , but they’re not”
Serves 6 / prep 25min./ cook time 35 min

Ingredients – Enchiladas

  • 8 oz cream cheese
  • 2 tbsp water
  • 2 tbsp onion powder
  • 2 tbsp cumin
  • ½ tsp salt
  • ½ tsp pepper
  • 1 cup diced cooked chicken
  • 6 six-inch flour tortillas

 

Ingredients – Sauce

  • 2 cans cream of chicken soup
  • 2 cups sour cream
  • 1 cup milk
  • 8 oz chopped green chiles
  • 2 cups shredded cheddar cheese

 

Method;

  • Preheat oven to 350 degrees F
  • Grease a 13 x 9 baking dish
  • Mix all enchilada ingredients except flour tortillas in a large bowl
  • Place an equal scoop (about ¼ cup) of the mixture on each tortilla
  • Fold and roll tortillas placing them seam side down in the baking pan
  • Next mix the sauce ingredients (except the cheddar) together and pour over the enchiladas
  • Bake uncovered for 30min
  • Sprinkle cheddar on top – bake for 5 min more

* You can substitute beef and cream of onion soup for chicken and cream of chicken soup, if you prefer.
