Easy and creamy enchiladas
“ these sound complicated , but they’re not”
Serves 6 / prep 25min./ cook time 35 min
Ingredients – Enchiladas
- 8 oz cream cheese
- 2 tbsp water
- 2 tbsp onion powder
- 2 tbsp cumin
- ½ tsp salt
- ½ tsp pepper
- 1 cup diced cooked chicken
- 6 six-inch flour tortillas
Ingredients – Sauce
- 2 cans cream of chicken soup
- 2 cups sour cream
- 1 cup milk
- 8 oz chopped green chiles
- 2 cups shredded cheddar cheese
Method;
- Preheat oven to 350 degrees F
- Grease a 13 x 9 baking dish
- Mix all enchilada ingredients except flour tortillas in a large bowl
- Place an equal scoop (about ¼ cup) of the mixture on each tortilla
- Fold and roll tortillas placing them seam side down in the baking pan
- Next mix the sauce ingredients (except the cheddar) together and pour over the enchiladas
- Bake uncovered for 30min
- Sprinkle cheddar on top – bake for 5 min more
* You can substitute beef and cream of onion soup for chicken and cream of chicken soup, if you prefer.
