Italian Beef and cheese roll ups

Serves 6/ prep 20 min./ cook time 35 min

This, is So Good! And amazingly easy. I didn’t have any leftover roast beef, so I used Minute Steaks. It turned out so Yummy.

Ingredients:

  • 6 thin slices of leftover roast beef
  • For the filling use:
    • 1 pint ricotta cheese
    • 2 tsp ea garlic powder, onion powder,and italian seasoning
    • 8 oz. shredded mozzarella cheese
    • 2 cups of your favorite pasta sauce
    • 4 oz. ea shredded mozzarella and grated parmesan

Method:

  • Preheat oven to 375 degrees F
  • Mix filling ingredients together and spoon onto the beef slices.
  • Roll up the beef slices , holding them together with a wooden toothpick.
  • In a 9×13 baking pan pour 1 cup of pasta sauce and lay the filled beef roll ups in the sauce.
  • Cover with remaining sauce and sprinkle with the mozzarella and parmesan.
  • Cover the pan and bake for 30 minutes, take the cover off and bake another 5 minutes. or until the cheese is melted.
  • Serve with pasta or rice
