Leftover pork hash

3-4 servings/ prep 10 min./ cook time 15 min.

Ingredients:

  • Approx. 1 cup Chopped cooked pork
  • ½ cup Chopped onion
  • 1 tbs butter
  • 2 leftover diced baked potatoes
  • Salt and pepper

Method:

  • Saute onion with the butter over med, heat for 2 min.
  • Add the pork and cook for about 3 min.
  • Stir in the potatoes and tossing occasionally, cook until brown. Salt and pepper to taste

* Leftover ham or smoked pork is great in this recipe as well
** Try sprinkling ⅛ tsp cayenne or paprika in mixture
