Leftover pork hash
3-4 servings/ prep 10 min./ cook time 15 min.
Ingredients:
- Approx. 1 cup Chopped cooked pork
- ½ cup Chopped onion
- 1 tbs butter
- 2 leftover diced baked potatoes
- Salt and pepper
Method:
- Saute onion with the butter over med, heat for 2 min.
- Add the pork and cook for about 3 min.
- Stir in the potatoes and tossing occasionally, cook until brown. Salt and pepper to taste
* Leftover ham or smoked pork is great in this recipe as well
** Try sprinkling ⅛ tsp cayenne or paprika in mixture
