Leftover potato hash

Ingredients:

  • Leftover roasted or baked potatoes [ cubed small ]
  • With or without the skins
  • Any leftover cooked veggie or chopped bacon
  • Chopped onion
  • Some eggs

Method:

  • Add to an oiled preheated, 350 degree fry pan, the bacon and potatoes.
  • As it starts to brown, add other ingredients , stirring so it cooks evenly and becomes brown and crispy
  • Close to the end, reduce the heat, and crack the eggs on top and place pan in oven at 325.
  • Bake until eggs are not runny.
  • Garnish with chopped parsley and chives
