Leftover potato hash
Ingredients:
- Leftover roasted or baked potatoes [ cubed small ]
- With or without the skins
- Any leftover cooked veggie or chopped bacon
- Chopped onion
- Some eggs
Method:
- Add to an oiled preheated, 350 degree fry pan, the bacon and potatoes.
- As it starts to brown, add other ingredients , stirring so it cooks evenly and becomes brown and crispy
- Close to the end, reduce the heat, and crack the eggs on top and place pan in oven at 325.
- Bake until eggs are not runny.
- Garnish with chopped parsley and chives
