Leftover roast beef in tomato sauce
serves 4 / prep 10 min. / cook time 2 ½ hrs.
Ingredients:
- 1tbsp oil
- 1 chopped med. Onion
- ¾ cup Finely chopped green pepper
- 1 lb. ½ in. Cubed leftover roast beef
- 1 28 oz. Can undrained diced tomatoes
- 1 can condensed tomato soup
- 2 tsp dried oregano
- 1 bay leaf
- Ground pepper to taste
Method:
- Sauté peppers and onion in pan over med. Heat
- Throw all the ingredients in a slow cooker with the onion and peppers
- Cook on med-1 hr.
- Cook on low another 1 ½ hrs.
* Beautiful over noodles in a shallow bowl served w/ salad and garlic bread
