Leftover roast beef in tomato sauce

serves 4 / prep 10 min. / cook time 2 ½ hrs.    

Ingredients:

  • 1tbsp oil
  • 1 chopped med. Onion
  • ¾ cup Finely chopped green pepper
  • 1 lb.  ½ in. Cubed leftover roast beef
  • 1 28 oz. Can undrained diced tomatoes
  • 1 can condensed tomato soup
  • 2 tsp dried oregano
  • 1 bay leaf
  • Ground pepper to taste

Method:

  • Sauté peppers and onion in pan over med. Heat
  • Throw all the ingredients in a slow cooker with the onion and peppers
  • Cook on med-1 hr.
  • Cook on low another 1 ½ hrs.

  * Beautiful over noodles in a shallow bowl served w/ salad and garlic bread
