Penne with Vodka Tomato Cream Sauce

Serves 8 /  prep 10 min. / cook time 30 min      

Ingredients:

  • 1 lb. Penne pasta [cooked al dente]
  • ¼ cup Olive oil
  • 4 minced garlic cloves
  • ½ tsp. Crushed red pepper seeds
  • 1 28oz can crushed tomatoes
  • ½ tsp. Salt
  • ½ cup Heavy cream
  • 1 cup Chopped up leftover beef roast or steak
  • ¼ cup Chopped fresh parsley

Method:

  • Heat oil In a large heavy pot on med. Heat, saute the garlic and pepper seeds
  • Add the tomatoes, beef and salt, bring to a boil reduce heat and simmer for 15 min
  • Add the cream and vodka and simmer for 5 min.
  • Then add cooked penne and stir in parsley
