Penne with Vodka Tomato Cream Sauce
Serves 8 / prep 10 min. / cook time 30 min
Ingredients:
- 1 lb. Penne pasta [cooked al dente]
- ¼ cup Olive oil
- 4 minced garlic cloves
- ½ tsp. Crushed red pepper seeds
- 1 28oz can crushed tomatoes
- ½ tsp. Salt
- ½ cup Heavy cream
- 1 cup Chopped up leftover beef roast or steak
- ¼ cup Chopped fresh parsley
Method:
- Heat oil In a large heavy pot on med. Heat, saute the garlic and pepper seeds
- Add the tomatoes, beef and salt, bring to a boil reduce heat and simmer for 15 min
- Add the cream and vodka and simmer for 5 min.
- Then add cooked penne and stir in parsley
